Simple Chilli

Chilli con carne is some thing I remember my mum making for us all when we all lived at home. She even used to make it for me to put in the freezer when I was older. It’s simple comfort food suitable for all members of the family. It’s a simple and easy meal to make mostly with ingredients from the kitchen cupboard. Every one makes their chilli different so I thought I would share with you my recipe that all my family love.

Serves 4

Ingredients
500g minced beef
1 medium onion, finely chopped
1 garlic clove, crushed or finely chopped
1 red pepper, deseeded and sliced
1 400g tin chopped tomatoes
1 400g tin red kidney beans, drained
2 tbsp tomato puree
2-3 tsp mild chilli powder
1 tsp cumin
2 tsp paprika
300ml beef stock
Oil

1. Fry the onion, pepper and garlic in a little oil for 5 minutes. Add beef mince and stir until it has browned all over. Stir in the cumin, paprika and chilli powder.
2. Pour in the stock, tinned tomatoes, tomato puree and kidney beans. Bring to the boil and simmer for another 15 minutes.
