Homemade Chicken Stock

Chicken is quite an expensive meat to have in meals, it is probably one of our second most consumed meats in our house (pork being the first). To keep the price down I buy a whole chicken and use the different cuts to make up to four different meals. This week we have had the chicken breasts for Hunters Chicken, the legs for homemade chicken nuggets, any leftover meat was used in a vegtable and rice soup. Often, the carass gets wasted but I turn it into stock which is one of the best tasting stocks I have ever tasted!

Simple Cheese Straws

This is a great recipe to make with kids, plus my two love eating them as a snack! You can add extras such as herbs, sesame seeds or even different types of cheese. With the leftover dough I used a small cutter to make biscuits.

Prawn and Chickpea Curry

Simple Biscuits

These cookies were made by my 3 year daughter. They only require 3 ingredients so as you would imagine, they are very cheap and easy to make. We put jam inbetween two of ours but you could cut them out in any shape, ice them or even add chocolate chips!

Slimming World Chocolate Cake 

More or less everyone I know is attending Slimming World (apart from myself!), so I thought I would try some recipes and I have been impressed. Recently I attempted to make a Slimming World cake and I found it too bitter so I developed this one which I much prefer. I worked it out as 1 syn per slice but please correct me if I’m wrong!

Sticky Pork

I was actually supposed to be making a dish to fit in with Chinese New Year but didn’t realise I had run out of 5 spice until I started making it (I’m kinda tired)!!
It was pretty delicious without it but if you do want to try it just add 1 tbsp of Chinese 5 spice. I’ve used pork loins but can use which ever cut or even meat you wish.

Teriyaki Salmon and Noodles 

Last week I picked up some salmon portions in the reduced section for 50p each. We do not eat fresh fish very often as it’s usually so expensive. I asked for suggestions for a dish to cook on my blogs Facebook page and I was not disappointed, I wish I had picked up some more salmon now!

This dish was really simple to make. The rich sticky fish goes really well with the fresh tasting noodles. You may want to add more chilli powder if you prefer spicy food but the amount I put in was perfect for my children and my wussy self!

Slow Cooker Lamb Biryani 

In our household we are currently trying to be extra healthy after eating a few too many treats over the Christmas season!

Lamb is a great source of protein, zinc and iron. Recently I was asked to create a recipe using Welsh Lamb. It is excellent quality with its certified PGI status that guarantees that the meat has been reared and prepared to the highest standard.

The lamb I received was a very lean cut. It tasted lovely and tender in my slow cooked lamb biryani and completely debunked the myth that lamb is a fatty meat.

Slow Cooker Pulled Pork

For Christmas I received a slow cooker, I have been meaning to get one for ages but have always had something more important to spend my money on!

My first experiment was pulled pork. It’s a dish that all my family love but I have never attempted to make it myself.

The pork joint leg joint cost £2.80 for 1.9kg and I completely underestimated how much it would make. It gave the four of us (two hungry adults and two toddlers), enough for three different meals.
