Beans, beans, good for your heart… They actually are! Eating beans can help prevent heart disease as well helping to lower your cholesterol. They can be a bit boring so I like to add them to meals to liven them up a bit.
For the taco seasoning:
1 tbsp chilli powder
1/2 tsp garlic powder
1/2 tsp paprika
1/2 tsp cumin
1/2 tsp salt
250g tin cannellini beans, drained
8 medium flour tortillas
1 red pepper, deseeded and sliced
2 chicken breasts, cut into strips
1 onion, finely chopped
2 tbsp taco seasoning
5 mushrooms, sliced
100g cheddar cheese, grated
- Fry the chicken and onion in a little oil until chicken starts to turn white. Sprinkle over taco seasoning. Add mushrooms and pepper and give a good stir until every thing is coated evenly in seasoning. Cook on a medium heat for 7-10 minutes or until chicken is cooked through. Stir in the beans once you have removed from the heat.
- Spread the chicken mixture evenly onto a tortilla. Sprinkle some cheese on top and place another tortilla on top. Either heat underneath the grill or heat it in a dry frying pan until cheese melts.
