Cheesy Chicken and Bean Quesadillas

Beans, beans, good for your heart… They actually are! Eating beans can help prevent heart disease as well helping to lower your cholesterol. They can be a bit boring so I like to add them to meals to liven them up a bit.

For the taco seasoning:

1 tbsp chilli powder

1/2 tsp garlic powder 

1/2 tsp paprika

1/2 tsp cumin

1/2 tsp salt

Serves 4


250g tin cannellini beans, drained 

8 medium flour tortillas 

1 red pepper, deseeded and sliced 

2 chicken breasts, cut into strips 

1 onion, finely chopped 

2 tbsp taco seasoning 

5 mushrooms, sliced 

100g cheddar cheese, grated 

  1. Fry the chicken and onion in a little oil until chicken starts to turn white. Sprinkle over taco seasoning. Add mushrooms and pepper and give a good stir until every thing is coated evenly in seasoning. Cook on a medium heat for 7-10 minutes or until chicken is cooked through. Stir in the beans once you have removed from the heat.
  2. Spread the chicken mixture evenly onto a tortilla. Sprinkle some cheese on top and place another tortilla on top. Either heat underneath the grill or heat it in a dry frying pan until cheese melts.
