Prawn and Chickpea Curry

Budget prawn and chickpea curry recipe

This curry is suitable for all the family. It was mild enough for my children and still packed with flavour for the adults. I served it with brown rice and my homemade naan bread.

200g frozen prawns

1 onion, finely chopped

1 red pepper, finely chopped

2cm fresh ginger, grated

1 tbsp garam masala

2 tsp coriander

1/2 tsp chilli powder

1 tsp cumin

1 tsp turmeric

1 400 ml can coconut milk

1 400g tin chickpeas, drained

2 tbsp tomato purée

  1. Fry the onion and red pepper in a little oil until it starts to brown, add the ginger and chickpeas, cook for a further 2 minutes. Add all other ingredients apart from the prawns, stir and let it simmer on a medium heat for 15-20 minutes.
  2. Pour in the frozen prawns and cook for another 5-10 minutes. Serve with rice and Homemade Naan Bread.
