Tuna and Broccoli Bake 

When it comes to meal planning I always try and include one meal that includes fish. It seems expensive for the amount you actually get so I usually buy tinned. The town I used to live in had an amazing fishmonger, it was cheap, fresh and had so much more variety. Now I’ve moved and live no where near one! If your local supermarket has a fishmonger in store, check to see what time they close because they reduce any fish that they can not sell the next day. You maybe able to pick up some fish to use for your meal that day!

This meal costs £1.10 per serving.

Serves 4


400g pasta (any kind) 

1 onion, finely chopped 

1 small broccoli, stalks chopped 

1 160g tin of tuna 

1 vegetable stock cube 

100g cheddar cheese, grated 

600ml milk

25g butter 

25g plain flour 

100g breadcrumbs

2 tsp mixed herbs 

  1. Preheat oven to 200C. Put pasta in a pan of boiling water. Cook for 10-15 minutes or until soft. Drain and put to one side.
  2. In another pan, boil water with stock cube, then add broccoli and onion. Cook for 15 minutes. Drain and put to one side.
  3. In yet another pan (sorry to who ever is doing the washing up!), melt butter and then stir in flour and cook for 1 minute. Take the pan off the heat and gradually whisk in the milk. Return to the heat, bring the boil, stir constantly. Reduce heat and simmer for 5 minutes. Stir in herbs and cheese and let it melt.
  4. Put all ingredients in an oven proof dish. Stir them all together until well mixed. Cover the top with bread crumbs and cook for 30-35 minutes.
