I don’t know about everyone else, but I don’t have much time to make my lunch come lunch time. My husband comes home for his lunch so I have to make lunch for him and two toddlers so it is hard to make something quick but still delicious. We often have sandwiches and thanks to The English Provender Co, we got to try a few different pickles in them last week! It was hard trying to decide on our favourite but this one got the thumbs up from all the family.
Preparation and cooking time: 10 minutes
Makes 2 Sandwiches
You will need:
The English Provender Co Beetroot Proper Pickle
4 Slices of crusty bread, toasted
1 tomato, sliced
Handful of mixed salad leaves (I have used rocket, spinach and watercress)
- Place the halloumi cheese and tomatoes on one slice of the toast, put under the grill for 5 minutes.
- Meanwhile, spread the beetroot pickle on the other slice of toast. The more the merrier!
- Once the cheese and tomato slice is ready, add the mixed salad and the other slice of toast on top.
- Serve and enjoy!
