Chicken Taco Ramen

This recipe is the type I do when we have absolutely no money and I have just what’s in the cupboard, freezer or fridge. I used the meat from the thighs of the whole chicken I used yesterday and the super cheap packet of flavoured noodles again so it costs around 42p a serving. I’ve included the ingredients to make taco seasoning which you can make a small container full and then use it in other meals.

Chicken and Chickpea Red Curry

This recipe was originally from a vegan cook book but I have changed it a lot to suit all of our tastes. You can have it without the chicken to be a vegan or vegetarian dish.

Remember to take a portion out before adding the chilli if you are cooking for children!

How to use a whole chicken for 4 meals

A big part of food shopping is remembering to live within your means. If you can’t afford it, don’t buy it! It’s tempting to get sucked into supermarket offers for things you don’t need just because it’s cheap. My advice is to write your shopping list with everything you need leading up to your weekly shop, also eat before you go. There is nothing worse than food shopping on an empty stomach!

Tomato and Basil Potato Focaccia 

I don’t get to bake bread as much as I would like just because it takes so long to do, but today was a miserable day so I decided to make my own focaccia. It’s not the easiest to get the hang of because the dough is wetter than normal bread dough. I also made it with potato, which I hadn’t tried before but it turned out pretty good!

Chorizo Chowder

When I first started to cook meals this was one of the first things I used to do. Partly because it’s easy to make but also because I love soup and chorizo.

I took out a bowl full before adding the cayenne pepper because it’s a bit to spicy for little ones.

It’s the perfect meal for a cold miserable day (like today!) served with some crusty bread. Also, it only costs 72p a serving!

Poor man’s Wellington or Posh Sausage Roll

Eva loves sausages rolls but you can never tell what actually goes into one that you buy in a supermarket. Home made is always better, you can put any thing you like in your meals.

This is really easy to make especially if you buy ready made puff pastry. You can make your own like, I just didn’t have time.

You can have it hot, cold, as a snack, as part of a meal or for lunch. Don’t worry if your plait isn’t perfect, you don’t even have to plait it at all!

Feta and Spinach Filo Cups

These are great as part of a meal or even just as a snack hot or cold. I use ready rolled filo pastry sheets (don’t tell Mary Berry!). I use frozen spinach that has been defrosted but you can you fresh spinach if you wish. Also I have used cup cake cases but a greased muffin tin would work also.

How to use your pantry, fridge and freezer. 

Who even has a pantry any more?! I keep all my food in a corner cupboard but pantry sounds better!

A part of the reason I’m able to keep the price of my food shopping down is because I keep a well stocked pantry. It contains the smaller items that you use regularly. Some may seem a bit expensive but they are more like an investment as they will be used in many meals.

I bet we all have some thing at the back of our cupboard that we got especially for a recipe and then it never saw the light of day again.

Bacon and Pine Nut Macaroni Cheese

Cheese and pasta are two of my favourite foods, I eat cheese every day! So you would think macaroni cheese would be my absolute favourite but I have always found it boring, tasteless and bland. Every time I have cooked it I’ve developed and added things until I finally became happy with it. I’ve added pine nuts and crispy bacon for texture. The cheese sauce isn’t a classic cheese sauce, it’s not really suitable for those on a diet!
