Let me start off my saying, this is the first risotto I have ever made! I was recently watching a cooking show on BBC called The Box (I’m actually a little obsessed with it!), some of the contestants on an episode were making risotto so it inspired me to make one too. I’ve made a cheap and simple one with two of my favourite things in life, cheese and bacon! I have used arborio rice which is used for making risottos or rice puddings but just normal long grain rice will do, plus it is cheaper.
TOP TIP: Never stop stirring!!!!
Serves 4 Costs: 54p a serving
300g long grain or arborio rice
150g cheddar cheese, cut into chunks
1 litre hot vegetable stock, made with two stock cubes
2 garlic cloves, crushed
3 spring onions or 1 normal onion, finely chopped
6 rashers of bacon
- Melt the butter in large saucepan. Add the onion and garlic, cook for 4-5 minutes. Stir in the rice and let it absorb the butter.
- Pour in 1/4 of the stock. Stir constantly until the rice has soaked it up. Repeat with the rest of the stock, adding a little at a time.
- Add in the cheese and stir until it has all melted in.
- Grill the bacon until crispy, cut up into chunks and serve on top.
