These are really quick and easy to make. We have them for lunch or even as a snack. Any leftovers can be eaten cold the next day or even frozen and heated up again for another day.
1 sheet of puff pastry
3 tbsp tomato purée
2 tsp mixed herbs
100g cheddar cheese, grated
1. Spread the tomato purée on the puff pastry, sprinkle over the mixed herbs, followed by the cheese and finally place the pepperoni slices evenly on top.
2. Carefully roll the pastry up into a sausage shape. Cut off either end to make it even.
3. With a sharp, long knife, cut into even slices around 2cm wide. Place on a baking tray and cook in a preheated oven, at 200C for 6-10 minutes.
