For those of you who don’t know what baba ganoush is, it is a delicious smokey dip made from aubergines.
The traditional recipe for baba ganoush contains tahini but at £3 a jar…no thank you!
So, I hope you enjoy my budget version.
Costs 15p per serving
2 aubergines, tops cut off
2 tsp garlic powder
3 tbsp lemon juice or juice from 1 lemon
1 tbsp smooth peanut butter
2 tbsp oil
2 tsp parsley
Black pepper to taste
- Prick the aubergines all over with a fork. Place under the grill for 20-25 minutes, or until the skin is charred and wrinkled. Turn the aubergines over half way through cooking.
2. Mix together the garlic, lemon juice, oil, parsley, peanut butter and oil so it forms a paste.
3. When the aubergines have cooled, scoop out the flesh and blend together with the paste.
