This is an ultra cheap meal, 92p a serving! It’s easy to blend down for smaller ones too. I didn’t like courgette until a few months ago, actually I haven’t really tasted it but I’m trying to get my toddler to try everything I can think of and courgette is one green vegetable that she actually likes now. She’s also a big fan of pasta and cheese so this dish is especially for her because she’s been a bit run down with chicken pox the last few days.
350g pasta (any kind)
150g cheddar cheese, grated
25g un-salted butter
25g plain flour
2 tsp basil
2 courgettes, cubed
- Put pasta in a pan of boiling water for 10-15 minutes. Drain.
- Meanwhile, melt the butter an a saucepan and then stir in the flour. Take off the heat and gradually whisk in the milk. Return back to the heat until it boils, add cheese and cook until cheese has melted.
- In a small frying pan, dry the courgette lightly until they start to brown.
- Mix all ingredients together. It can be eaten hot or cold.
