Courgette frittata

This is Mr BFM’s favourite meal and he is a big meat lover so it must be pretty good! It’s really quick and easy to make, I’m not sure if this is the way a typical frittata is made but it still works. It’s so easy, that my toddler actually did most of preparing. I had to take over as she got a bit excited about the cheese and fell off her chair (she was fine after having a slice of cheese) but she did the majority of it!


Ingredients:

6 medium eggs 

2 courgettes, grated 

1 small onion, finely chopped

1 tsp garlic granules

100g cheddar cheese, grated 

Salt and pepper 

Olive oil

  1. Preheat grill.
  2. Whisk eggs in a large mixing bowl, add all other ingredients and stir until evenly mixed.
  3. Heat oil in a large frying pan, when it is up to temperature add the frittata mix and spread evenly around the frying pan.
  4. Cook on a medium heat for 7-10 minutes.
  5. Once the bottom is cooked enough place the frying pan under the preheated grill and cook until golden on top.

Top tips:

You can put more or less any vegetables in a frittata. 

Try chopped up boiled potatoes, mint and courgette or courgette and spinach. 

It is even nice cold as a midnight snack or for tomorrow’s lunch. 

Try not to fall off your chair when grating your cheese!! I
