This is a cheap and simple vegetarian meal, enjoyed by all the family. I have made the gnocchi from scratch before but it is just as budget friendly and tasty with shop brought, it’s less time consuming and not as messy too!
Serves 4 Costs 62p a serving
150ml vegetable stock
1 tbsp tomato puree
2 tsp basil
1 400g tin chopped tomatoes
1 red pepper, deseeded and sliced
1 onion, finely chopped
200g mozzarella, sliced
1 garlic clove, finely chopped
1. In a large frying pan, fry the onion and pepper in a little oil. Add the garlic and cook for another minute.
2. Pour in the tomatoes, vegetable stock, mozzarella and gnocchi. Let it simmer for 10 minutes, stirring occasionally and then stir in the basil and tomato puree, cook for a further 5 minutes or until gnocchi is soft.
