Quick Refried Baked Beans

We love Mexican food in our house! Most dishes are quick and easy to prepare with so many different options. These refried beans are great as a side dish, dip with chips, in a burrito or my personal favourite, chimichangas.

They are typically made with pinto beans but I have used a can of baked beans as they are cheap and something that is always in my kitchen cupboard.

1 400g tin baked beans, juice drained

2 tsp garlic granules

1 tsp chilli powder

1 tsp cumin

Juice of half a lime

  1. Heat a little oil in a frying pan. Add the beans and cook for 3-4 minutes. Add the garlic, chilli powder, cumin and 2 tablespoons of water. Mix until combined and cook for a further 1-2 minutes.quick refried baked beans cooking
  2. Take off the heat and mash with a potato masher, squeeze in the lime juice and stir.quick refried baked beans
