Here is our meal plan for this week.
I have tried to keep it simple since we have been really busy with school/nursery/work/snotty noses… We also took the plunge and removed the stair gate so whenever I go into the kitchen, my son goes straight up the stairs and digs through my make up bag!
All meals are under £1 a serving and are fussy toddler approved.
Monday: Macaroni Cheese – You can make it with any kind of pasta shape, a simple cheese sauce with two teaspoons of mustard and one teaspoon garlic granules, pour over the cooked pasta, top with breadcrumbs and cook in the oven for 20 minutes at 200C.
Tuesday: Toad in the hole
Wednesday: Tuna burgers – My daughter requested burgers this week. I managed to pick up some bread rolls from the reduced section in Tesco for 3P, perfect!
Thursday: Budget fishcakes – with homemade chips and salad.
Friday: Spaghetti and meatballs – I make these by taking the skin off of sausages, mash together with mixed herbs, roll into balls and cook in the oven for 15-20 minutes.
Saturday: Homemade Pizza – Yep, another pizza. One of these days I’m going to shock you all and go a week without pizza… I doubt it will be anytime soon though!
Sunday: Roast Dinner – I don’t often make a roast dinner because we like to spend our weekends outside exploring and cooking a roast is soooo time consuming! But I do like using the leftover chicken and vegetables for meals over the next few days.

August has been a very expensive month in the Budget Food Mummy household. We have had two birthdays with a joint birthday party, days out during the summer break and a school uniform to buy for my daughter who has just started Reception class. So we are really tightening our purse strings over September to get ourselves back on track.
My husband and I have started to have one ‘grown ups’ meal a week. It is normally something the kids wouldn’t like to eat. We cook it together when they have gone to bed.
All meals in this weeks meal plan our under £1 per serving.
Fish pie and vegetables – This is a new fish pie recipe I am trying out, it is made with tinned fish and served with frozen vegetables.
Crispy shredded chicken with egg fried rice – Our ‘grown up’ meal! It is one of our favorites from the takeaway so we thought we would recreate it at home.
Leftover rice pancakes and taco chicken – The leftover rice and chicken from yesterday’s meal. The chicken will be cooked in taco seasoning and served in the rice pancakes with red pepper and onion.
Homemade sausage rolls with vegetables and spaghetti hoops – I let my daughter pick two meals each week that she thinks her and her brother will like. (The vegetables aren’t her choice though!)
Mash potato and bacon soup – A new recipe again, I’m hoping it will use up the all the potatoes I have in the cupboard. It will be served with some homemade bread rolls.
Homemade hamburgers and chips – The burgers are made with sausages, breadcrumbs and a few herbs and spices. A family favorite in our house! (Another one of my daughter’s choices.)
Homemade Pizza – It is looking like a miserable weekend weather wise so we are going to spend some of the day making pizza. My daughter loves helping to make the dough and both kids like to chose their own toppings.
So, that is my meal plan for the week! What is on yours?
Risotto is such a comforting and warming meal but using arborio rice is completely unnecessary as it is quite expensive. I use pearl barley because it is such a cheap grain. In this recipe I used the dried mushrooms I received with my mushroom growing kit from GroCycle.
I have made this before with fresh mushrooms which also tastes just as delicious. This is a great recipe to make in your slow cooker.

There are so many reasons I love homemade chicken nuggets!
- They use up any leftover chicken from our roast dinner.
- You know exactly what goes into them.
- The kids love getting messy whilst they help make them.
- The kids actually eat them all!
I use the cooked leg meat and any leftovers from our roast chicken but you can which ever part of the chicken you prefer.

You may be wondering why I’m doing such a simple recipe! Well not only were hash browns one of the first things I attempted to cook for my husband when we first met (massive fail, I didn’t put the eggs in and tried to cook them in the oven!), but they are also cheap to make.
The mixture and hash browns can be frozen if you don’t need them all at once!

For those of you who don’t know what baba ganoush is, it is a delicious smokey dip made from aubergines.
In our house, we have it with flat breads, naan bread and a selection of vegtable sticks to dip in it. You can also turn it into a meal by adding some meat, chickpeas or extra vegtables.
The traditional recipe for baba ganoush contains tahini but at £3 a jar…no thank you!
So, I hope you enjoy my budget version.

I have lost count of the number of apple crumble recipes I have tried that have been a complete disaster! This is my simple and cheap recipe that has been a hit with all the family. You can add different types of fruit if you wish, my favourite is frozen mixed berries.
The most important question is, do you have it with custard or ice cream?!

This weeks meal plan includes chicken so once again I brought a whole chicken to bring the price down. The breasts were used for hunters chicken, the leg meat for fajitas and the carcass for homemade chicken stock which was used in chorizo chowder.

We love Mexican food in our house! Most dishes are quick and easy to prepare with so many different options. These refried beans are great as a side dish, dip with chips, in a burrito or my personal favourite, chimichangas.
They are typically made with pinto beans but I have used a can of baked beans as they are cheap and something that is always in my kitchen cupboard.

Your store cupboard contains some of the most important ingredients when it comes to cooking on a budget. You don’t have to have fresh or expensive ingredients to make a tasty home cooked meal and this potato curry proves it!
Tinned potatoes are a great thing to keep in your cupboard, not only are they cheap (12p), but you can either use them as the main element of a meal, like this curry or you could use them in a side dish such as potato salad or roasted.
My recipe for Homemade Naan Bread is a perfect side for this curry, all the ingredients can be found in your cupboard and fridge.
