Meal Plan Week 11

Here is our meal plan for this week.
I have tried to keep it simple since we have been really busy with school/nursery/work/snotty noses… We also took the plunge and removed the stair gate so whenever I go into the kitchen, my son goes straight up the stairs and digs through my make up bag!

All meals are under £1 a serving and are fussy toddler approved.

Monday: Macaroni Cheese – You can make it with any kind of pasta shape, a simple cheese sauce with two teaspoons of mustard and one teaspoon garlic granules, pour over the cooked pasta, top with breadcrumbs and cook in the oven for 20 minutes at 200C.

Tuesday: Toad in the hole

Wednesday: Tuna burgers – My daughter requested burgers this week. I managed to pick up some bread rolls from the reduced section in Tesco for 3P, perfect!

Thursday: Budget fishcakes – with homemade chips and salad.

Friday: Spaghetti and meatballs – I make these by taking the skin off of sausages, mash together with mixed herbs, roll into balls and cook in the oven for 15-20 minutes.

Saturday: Homemade Pizza – Yep, another pizza. One of these days I’m going to shock you all and go a week without pizza… I doubt it will be anytime soon though!

Sunday: Roast Dinner – I don’t often make a roast dinner because we like to spend our weekends outside exploring and cooking a roast is soooo time consuming! But I do like using the leftover chicken and vegetables for meals over the next few days.

Homemade Naan Bread

Do you ever get stuck in a rut of just buying something ready made from the shop instead of making it yourself? This is exactly what I have been doing with naan bread! When I found out they were incredibly cheap and easy to make, I haven’t brought any since.

Lunch Meal Plan 1

Do you ever get stuck for ideas when it comes to lunches? All these lunches can be prepared in advance or are quick to prepare, and not a sandwich in sight! We usually have a different fruit/veg to go with each meal too. This week we have kiwi, apples, clementines, baby carrots and banana.

Monday: 

Cheese and Pepperoni Toastie

Tuesday: 

Cornish Potato Cakes

Wednesday: 

Carrot and Coriander Soup
Thursday:

Chicken and Salad Wraps (using leftover chicken from roast chicken and myTwo Ingredient Flat Breads

Friday: 

Cheese Scones

Saturday: 

Jacket Potatoes with Baked Beans and Cheese

Sunday:

Meal Plan Week 3

Meal plans make shopping for food and cooking meals a whole lot easier and cheaper. This week we are having a couple of regular favourites and some new or unpublished recipes.  All meals are less than £1 a serving and suitable for all the family. 

Monday: 

Chicken Chow Mein

Pull apart pizza

Thursday: 

Chorizo and Mozzarella Ham Burgers

Friday: 

Courgette Frittata

Saturday:

Meal Plan Week 2

This week my shopping bill was a little more than last week because I had run out of little things like stock cubes, flour, dried herbs etc. But the weeks meals are all still less than £1 a serving plus we have a couple of new recipes to try. 

Monday:

Meatball Baguettes

Two Ingredient Flat Breads

These are great to have with so many different things. We have them to go with curry, for tuna melts, cut up and used for dipping in soups and sauces, and I even put them in packed lunches. The possibilities are endless!

Pizza Dogs

At the start of every week, I do a meal plan and ask everyone if there is any thing in particular they want. My 3 year old daughter’s request was pizza sausage!! I’m not 100% sure what pizza sausage is, but she confirmed that these Pizza Dogs will do!
The tomato sauce makes quite a lot but I put the leftovers in the freezer so I can use it next time we make pizza.

Mozzarella Rolls

It’s that time of year again, Great British Bake Off is back on!! I’ve mentioned before about my love for baking bread (and Paul Hollywood!). Recently I have realised that I haven’t actually done a bread recipe of my own so here it is.
We ate these as a side dish with a tomato sauce and garlic butter to dip them in. Eva had a go at kneading the dough but it was a bit too much work for her to do so she got a bit bored but after the time it took to prove, she gained interest again. She really enjoyed cutting, shaping and putting the cheese in the middle.
They are easy to make so perfect if you are just starting out with bread making.

Korean BBQ Chicken and Sweet Fried Noodles – Encona Review

One of the best things I like about cooking is trying different foods so when I was offered the chance to review Encona’s new marinades, I couldn’t wait to get cooking! I received the Korean BBQ and Moroccan Harissa marinade. Korean food is something I wasn’t very familiar with so I was keen to try the BBQ marinade first. The hardest thing about making Asian food, which I love, is cooking on a budget whilst keeping the flavours. There are certain ingredients that I wouldn’t use every day so I try and make do with the things I have in my cupboard already.

Simple Chilli

Chilli con carne is some thing I remember my mum making for us all when we all lived at home. She even used to make it for me to put in the freezer when I was older. It’s simple comfort food suitable for all members of the family. It’s a simple and easy meal to make mostly with ingredients from the kitchen cupboard. Every one makes their chilli different so I thought I would share with you my recipe that all my family love.
