Store Cupboard Potato Curry

Your store cupboard contains some of the most important ingredients when it comes to cooking on a budget. You don’t have to have fresh or expensive ingredients to make a tasty home cooked meal and this potato curry proves it!

Tinned potatoes are a great thing to keep in your cupboard, not only are they cheap (12p), but you can either use them as the main element of a meal, like this curry or you could use them in a side dish such as potato salad or roasted.

My recipe for Homemade Naan Bread is a perfect side for this curry, all the ingredients can be found in your cupboard and fridge.

My Food Waste Journey

Did you know that the average household wastes around £470 worth of food and drink every year, even more for families? The most common reasons for throwing out food is that we cook too much or it gets left too long and spoils. As a budget cook, preventing food waste is high on my list of priorities. I go shopping weekly and buy exactly what I need for that week with the help of meal plans and a shopping list. Because I am on such a tight budget, if some thing goes to waste, I don’t have the luxury of buying any thing else. I make sure I eat before I go food shopping so I am not tempted to buy any thing that isn’t on the shopping list. Other wise, I would end up buying junk that just sits in the fridge or cupboard until it starts growing some other kind of life form! The only things I buy that aren’t on my shopping list are £2-5 worth of shopping for the food bank each week. You can also donate any thing in your cupboard which you are unlikely to use that is unused and in date.

Wussy Chicken Korma

I’m a bit of a wuss when it comes to curries and plus cooking for child, I lay off the spice. The good thing about making your own paste or sauce is that you put in as little or as much spice as you like. If you add too much or if you are cooking for children, try putting natural yoghurt or a squeeze of lemon on top after serving. The ingredients for the paste are things I usually have in the cupboard.

Moroccan Chicken and Lentil Curry with Cauliflower Rice

I hope everyone is having a great week! I have been doing so much cooking and baking, trying to perfect some dishes and also coming up with some new ones so keep your eyes peeled!!

Cauliflower rice is something I’ve wanted to post for a while but it’s never turned out the way I wanted. I finally discovered that the microwave is the answer! If you don’t have a microwave, you can fry it in a little oil but I found this went a bit wet and soggy. It may sound like a strange thing to have with a curry but I can assure you that it doesn’t actually taste of cauliflower! It’s another clever way of getting more vegetables into my family’s diet and it’s a low carb opinion compared to rice. I have simply grated the florets with a corse grater but you can also blend it to become finer and can then be used as cous cous rather than rice.
