Cheese and Bacon ‘Cornish’ Pasty

Okay so it’s not officially a Cornish pasty because it doesn’t have beef in it  but it’s a pasty made in Cornwall by a Cornish person so that will do! Pasties were a staple diet for tin minners. Eating pasties is as normal to me as eating a sandwich so I eat a lot of them. However, I don’t eat beef so this recipe is a great alternative. I don’t actually make them that much but since I live in the town which was once famous for tin mining, I thought I should put the recipe on here. No pressure!

Homemade Pizza

We are a family of pizza lovers. The great thing about making it your self is that you know exactly what’s going into it and all the family can get involved preparing it. I normally buy ready made bases to save time but seeing as it’s the weekend I thought I would make the pizza dough myself.

This recipe happened by accident! It originally was supposed to be cannelloni but I ran out of cannelloni tubes and only had lasagna sheets. I’m not a fan of beef or mince so I found it amazing!

Minestrone Soup

Soup is a really good way of using up any leftover vegetables, pulses and meat. I make it quite a lot, just so I don’t waste any food so it’s a cheap meal to make. Minestrone soup is so versatile, you can put any vegetables, pulses or any type of pasta or rice too. Because it has so many components, it’s pretty filling too. I have used lentils as they bulk out a soup and store well in the cupboard, you could use any kind of bean also such as baked beans as long as you drain them first. I have made this from all the leftovers from the meals during the week and I have added extra water and rice so it is enough to have for lunch tomorrow too. If you are vegetarian, use vegtable stock instead of beef.

Tunisian Omelette

When I go shopping in a supermarket I always pick up their free magazines. They are full of different recipe ideas and are usually pretty cheap too. This one is from Asda’s Easter magazine. I haven’t changed any thing just because it’s tastes so good already!

It costs 67p a serving and is healthy too!

Chicken and Bacon Burgers

As I’ve said before, I don’t eat beef but we eat lots of chicken and we all love bacon. I find chicken burgers aren’t as greasy as other burgers and I know exactly what is going into them so I’m fine giving them to little ones. For the ground chicken, I put chicken breasts in a electic chopper.

Chicken and Stilton Pie

Everyone loves a pie and this one is my personal favourite. I’m not a big Stilton fan but it tastes good in the creamy cheese sauce. This recipe was originally from an Asda free magazine. I haven’t changed it that much. I normally buy readymade pastry because I’m not very good at it but I attempted it and it actually turned out okay… A bit messy but still okay!

Chicken Taco Ramen

This recipe is the type I do when we have absolutely no money and I have just what’s in the cupboard, freezer or fridge. I used the meat from the thighs of the whole chicken I used yesterday and the super cheap packet of flavoured noodles again so it costs around 42p a serving. I’ve included the ingredients to make taco seasoning which you can make a small container full and then use it in other meals.

Feta and Spinach Filo Cups

These are great as part of a meal or even just as a snack hot or cold. I use ready rolled filo pastry sheets (don’t tell Mary Berry!). I use frozen spinach that has been defrosted but you can you fresh spinach if you wish. Also I have used cup cake cases but a greased muffin tin would work also.
