Here is our meal plan for this week.
I have tried to keep it simple since we have been really busy with school/nursery/work/snotty noses… We also took the plunge and removed the stair gate so whenever I go into the kitchen, my son goes straight up the stairs and digs through my make up bag!
All meals are under £1 a serving and are fussy toddler approved.
Monday: Macaroni Cheese – You can make it with any kind of pasta shape, a simple cheese sauce with two teaspoons of mustard and one teaspoon garlic granules, pour over the cooked pasta, top with breadcrumbs and cook in the oven for 20 minutes at 200C.
Tuesday: Toad in the hole
Wednesday: Tuna burgers – My daughter requested burgers this week. I managed to pick up some bread rolls from the reduced section in Tesco for 3P, perfect!
Thursday: Budget fishcakes – with homemade chips and salad.
Friday: Spaghetti and meatballs – I make these by taking the skin off of sausages, mash together with mixed herbs, roll into balls and cook in the oven for 15-20 minutes.
Saturday: Homemade Pizza – Yep, another pizza. One of these days I’m going to shock you all and go a week without pizza… I doubt it will be anytime soon though!
Sunday: Roast Dinner – I don’t often make a roast dinner because we like to spend our weekends outside exploring and cooking a roast is soooo time consuming! But I do like using the leftover chicken and vegetables for meals over the next few days.
What is on your meal plan this week?
This weeks meal plan includes chicken so once again I brought a whole chicken to bring the price down. The breasts were used for hunters chicken, the leg meat for fajitas and the carcass for homemade chicken stock which was used in chorizo chowder.

We love Mexican food in our house! Most dishes are quick and easy to prepare with so many different options. These refried beans are great as a side dish, dip with chips, in a burrito or my personal favourite, chimichangas.
They are typically made with pinto beans but I have used a can of baked beans as they are cheap and something that is always in my kitchen cupboard.

Your store cupboard contains some of the most important ingredients when it comes to cooking on a budget. You don’t have to have fresh or expensive ingredients to make a tasty home cooked meal and this potato curry proves it!
Tinned potatoes are a great thing to keep in your cupboard, not only are they cheap (12p), but you can either use them as the main element of a meal, like this curry or you could use them in a side dish such as potato salad or roasted.
My recipe for Homemade Naan Bread is a perfect side for this curry, all the ingredients can be found in your cupboard and fridge.

This is a great recipe to make with kids, plus my two love eating them as a snack! You can add extras such as herbs, sesame seeds or even different types of cheese. With the leftover dough I used a small cutter to make biscuits.

The last few weeks we have actually been doing okay for money, we were even able to put some aside for spending money our honeymoon next month. Things are finally looking good…nope!! The car breaks down! We now have to order our food online or go to the very overpriced local shop.
So here is my meal plan using both of those shops!
Monday: Homemade Pizza
Tuesday: Courgette frittata
Wednesday: Cornish Potato Cakes and salad
Thursday: Cheese and Bacon ‘Cornish’ Pasty
Friday: Slow Cooker Pulled Pork wraps
Saturday: Chicken and Chickpea Stew with Simple Vegetarian Dumplings
Sunday: BBQ Pulled Pork rolls
At the weekend I picked up a new lunch box at Poundland, it fits everything in perfectly! My daughter is obsessed with all things maic and fairies so that is the inspiration for today’s lunch.
I have used small wooden kebab sticks, small flower cookie cutter and eye picks. It took under 10 minutes to make.
- Bread, ham and cheese magic wand
- Green grapes
This curry is suitable for all the family. It was mild enough for my children and still packed with flavour for the adults. I served it with brown rice and my homemade naan bread.

I have been posting pictures of my 3 year old daughter’s packed lunches on my Facebook page for quite a while but I have never put them on my blog so here is one!
When she first started nursery, she had their cooked meals but after a few weeks it came apparent that she wasn’t enjoying them. So she has been having packed lunches ever since!
I don’t have any fancy equipment, just a few cookie cutters, eye picks and plastic pots. All of the lunches take under 10 minute and just me a bit of creativity and imagination! I also try and make them cheap and keep waste to a minimum. They include stuff she likes (she changes her mind everyday!) and at least one thing she either hasn’t tried or isn’t that keen on.
This lunch was inspired by the biscuits she made the day before and insisted to have it for lunch at school to show all her friends.
- Ham and cheese sandwich
- Kiwi fruit
- Homemade jam biscuit
More or less everyone I know is attending Slimming World (apart from myself!), so I thought I would try some recipes and I have been impressed. Recently I attempted to make a Slimming World cake and I found it too bitter so I developed this one which I much prefer. I worked it out as 1 syn per slice but please correct me if I’m wrong!
