Here is our meal plan for this week.
I have tried to keep it simple since we have been really busy with school/nursery/work/snotty noses… We also took the plunge and removed the stair gate so whenever I go into the kitchen, my son goes straight up the stairs and digs through my make up bag!
All meals are under £1 a serving and are fussy toddler approved.
Monday: Macaroni Cheese – You can make it with any kind of pasta shape, a simple cheese sauce with two teaspoons of mustard and one teaspoon garlic granules, pour over the cooked pasta, top with breadcrumbs and cook in the oven for 20 minutes at 200C.
Tuesday: Toad in the hole
Wednesday: Tuna burgers – My daughter requested burgers this week. I managed to pick up some bread rolls from the reduced section in Tesco for 3P, perfect!
Thursday: Budget fishcakes – with homemade chips and salad.
Friday: Spaghetti and meatballs – I make these by taking the skin off of sausages, mash together with mixed herbs, roll into balls and cook in the oven for 15-20 minutes.
Saturday: Homemade Pizza – Yep, another pizza. One of these days I’m going to shock you all and go a week without pizza… I doubt it will be anytime soon though!
Sunday: Roast Dinner – I don’t often make a roast dinner because we like to spend our weekends outside exploring and cooking a roast is soooo time consuming! But I do like using the leftover chicken and vegetables for meals over the next few days.
What is on your meal plan this week?
This weeks meal plan includes chicken so once again I brought a whole chicken to bring the price down. The breasts were used for hunters chicken, the leg meat for fajitas and the carcass for homemade chicken stock which was used in chorizo chowder.

What do you do with your leftover vegetables from your roast dinner? This week I put mine with with an easy pasta bake and made it even more tasty by putting crispy bacon crumbs on top. If you are a vegetarian, feel free to substitute the bacon for breadcrumbs. Both my kids ate all their broccoli… probably something to do with it being covered in cheese sauce!

This is a cheap and simple vegetarian meal, enjoyed by all the family. I have made the gnocchi from scratch before but it is just as budget friendly and tasty with shop brought, it’s less time consuming and not as messy too!

Did you know that the average household wastes around £470 worth of food and drink every year, even more for families? The most common reasons for throwing out food is that we cook too much or it gets left too long and spoils. As a budget cook, preventing food waste is high on my list of priorities. I go shopping weekly and buy exactly what I need for that week with the help of meal plans and a shopping list. Because I am on such a tight budget, if some thing goes to waste, I don’t have the luxury of buying any thing else. I make sure I eat before I go food shopping so I am not tempted to buy any thing that isn’t on the shopping list. Other wise, I would end up buying junk that just sits in the fridge or cupboard until it starts growing some other kind of life form! The only things I buy that aren’t on my shopping list are £2-5 worth of shopping for the food bank each week. You can also donate any thing in your cupboard which you are unlikely to use that is unused and in date.

This recipe is the type I do when we have absolutely no money and I have just what’s in the cupboard, freezer or fridge. I used the meat from the thighs of the whole chicken I used yesterday and the super cheap packet of flavoured noodles again so it costs around 42p a serving. I’ve included the ingredients to make taco seasoning which you can make a small container full and then use it in other meals.

Who even has a pantry any more?! I keep all my food in a corner cupboard but pantry sounds better!
A part of the reason I’m able to keep the price of my food shopping down is because I keep a well stocked pantry. It contains the smaller items that you use regularly. Some may seem a bit expensive but they are more like an investment as they will be used in many meals.
I bet we all have some thing at the back of our cupboard that we got especially for a recipe and then it never saw the light of day again.
