Leek and Mushroom Soup 

Another soup to save left over vegetables from going in the bin. It’s suitable for all the family and you can adapt it to suit tastes. I have made a cream free version not just because we have a cream hater in the house but also to keep costs down and it is healthier. You can either finely chop the leek and mushrooms or blend it all together when it had been cooked. It’s easy and quick to make too.

Vegetarian Bean Burgers

Although I am no longer a vegetarian, I still prefer vegetarian food. I don’t get to eat it that often because all the other members of the household are avid meat eaters, but I persuaded them to at least try these burgers especially for me!

Homemade Pizza

We are a family of pizza lovers. The great thing about making it your self is that you know exactly what’s going into it and all the family can get involved preparing it. I normally buy ready made bases to save time but seeing as it’s the weekend I thought I would make the pizza dough myself.

This recipe happened by accident! It originally was supposed to be cannelloni but I ran out of cannelloni tubes and only had lasagna sheets. I’m not a fan of beef or mince so I found it amazing!

Chicken and Chickpea Red Curry

This recipe was originally from a vegan cook book but I have changed it a lot to suit all of our tastes. You can have it without the chicken to be a vegan or vegetarian dish.

Remember to take a portion out before adding the chilli if you are cooking for children!

Poor man's Wellington or Posh Sausage Roll

Eva loves sausages rolls but you can never tell what actually goes into one that you buy in a supermarket. Home made is always better, you can put any thing you like in your meals.

This is really easy to make especially if you buy ready made puff pastry. You can make your own like, I just didn’t have time.

You can have it hot, cold, as a snack, as part of a meal or for lunch. Don’t worry if your plait isn’t perfect, you don’t even have to plait it at all!

Feta and Spinach Filo Cups

These are great as part of a meal or even just as a snack hot or cold. I use ready rolled filo pastry sheets (don’t tell Mary Berry!). I use frozen spinach that has been defrosted but you can you fresh spinach if you wish. Also I have used cup cake cases but a greased muffin tin would work also.

Bacon and Pine Nut Macaroni Cheese

Cheese and pasta are two of my favourite foods, I eat cheese every day! So you would think macaroni cheese would be my absolute favourite but I have always found it boring, tasteless and bland. Every time I have cooked it I’ve developed and added things until I finally became happy with it. I’ve added pine nuts and crispy bacon for texture. The cheese sauce isn’t a classic cheese sauce, it’s not really suitable for those on a diet!
