Summer is just around the corner! There is nothing better than a nice refreshing ice cream on a hot summers day unless, like my son, you can’t have cows milk. These watermelon ice lollies are a great alternative, they are also free of additives and artificial sugar.
Salsa is one of those things I used to buy in a jar but then discovered that it’s just as easy to make it. I have made mine with leftover tomatoes I had rolling around the fridge. We use it for so many things including, tacos, as a dip with crisps, in a burger and also in some meals.
I recently brought a lot of reduced bags of carrots from Asda for 5p, I have frozen some for meals or snacks during the week and the rest I’m making a soup with. Carrot and coriander is one of my favourite soups to make because it doesn’t require much preparation!

As the title suggests, this is the easiest falafel you will ever make! Not only is it easy to make but it’s super healthy and they only cost 32p a serving. I served mine in pitta bread with salad and salsa. It just goes to show that vegan food can be delicious and nutritious!
